Savory Zucchini Pancakes

Ingredients

  • 1 zucchini or courgette finely shredded
  • 1 small carrot finely shredded
  • 1 egg
  • 2 tbsp flour of your choice I prefer rye flour
  • 1 tsp baking powder
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Butter or olive oil for cooking the pancakes

Instructions

  1. Mix all the ingredients in a bowl, preferably one that has a lid and can be easily stored in the fridge

  2. Once all ingredients are mixed thoroughly, heat a frying pan and add some butter or olive oil.

  3. Place about 1 - 1½ tbsp of the mixture and spread evenly it in a somewhat pancake looking shape and make sure to smooth the edges to avoid burning them. Cook at medium heat for about 5-7 mins or until they are golden and you are able to flip them.
