It is officially grill all the things season, yey!. This time we had an abundance of delicious grilled pork and vegetables and I was quite unsure what to do with it. So, I ended up revamping the leftover grilled pork into something totally different, this sticky pork stir fry with noodles which ended up being a delicious and quick way to get a weekday dinner. It was surprising in flavour as the smokiness of the pork worked really well with the sweet and savoury sauce and together with a bit of a kick from the chili really give it an edge.

Sticky pork stir fry
Ingredients
- 3 Leftover pork chops
- 1 1/2 cups Leftover grilled vegetables
- 1 medium carrot finely julienned
- 1/2 pack egg noodles
- 3-4 tbsp honey
- 1 tbsp rice vinegar or white wine vinegar
- 2 tbsp soy sauce
- Red chili finely chopped
- 2 tbsp sesame oil
- 2 cloves garlic finely diced
- 1 medium ginger nob finely grated
- salt
- pepper
- sesame seeds ligthly toasted
Instructions

In a bowl mix together the honey, vinegar, soy sauce and chili.

Cook the noodles according to package instructions. And set aside.

Meanwhile, in a hot wok add the sesame oil and leftover grilled vegetables (In this case an assortment of finely sliced, red, green and yellow bell peppers, and red and yellow onion) and the fresh carrots. Stir for 1-2 minutes and push to one side.

Add ginger and garlic and stir until golden, then add the liquid mix stirring often until it starts to bubble and thicken

Cut the pork chops into thin strips or cubes, salt and pepper lightly and add to the wok stirring until the pork is thoroughly covered with the sauce. about 4-5 mins.

Work in the vegetables and lastly add the noodles and some of the noodle water. Stir everything together and serve topping with freshly toasted sesame seeds
