We are blessed in this family by being able and having a very close relationship with everything nuts. I try to incorporate nuts into almost every meal I make. So, these cookies are a no-brainer!
So quick and easy to make even my 3-year-old takes the lead whenever she is in the mood for cookies, AKA, every weekend.

Peanut butter and chocolate Oatmeal cookies
Ingredients
- 1 cup quick oats Optional: Gluten-free oat
- 3/4 cup chunky peanut butter
- 3/4 cup brown sugar
- 1/4 cup neutral vegetable oil,
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips
Instructions

Preheat the oven to 180C

Whisk together the eggs, sugar, peanut butter, and oil until you get a smooth even consistency.

Pour in all dry ingredients except for the chocolate chips and mix until you reach a dough consistency

Fold in the chocolate chips

Allow the dough to rest in the fridge for at least 20 minutes.

Remove dough from the fridge and line a large baking sheet with parchment paper.

Using a small spoon, scoop out the dough about into round form and place it in the baking tray approximately 2-3 cm apart. You’ll get about 15 -20 smaller cookies

Bake for 8-10 minutes. Sprinkle the cookies with sea salt and let cool for at least 10-15 minutes.
