Baked ‘Nduja and cherry tomatoes with fresh Burrata cheese

This super easy-to-make baked ‘Nduja and cherry tomatoes is an absolute knockout of a dish. It is a full meal and practically dessert in itself. It’s juicy, it’s spicy, it’s smoky, it’s rich, it’s creamy, and sweet all at once!

Inspired by a fresh Caprese salad, this dish is elevated with the smokiness and kick of the N’duja salami which combines beautifully with the sweetness of the cherry tomatoes and is complimented with fresh Pesto. Last but not least, this super quick and simple bake is topped with melt-in-your-mouth Burrata cheese rounding all the textures and flavors into pure bliss.

Serve on top of perfect sourdough bread and you have yourself a winner meal!

This baked ‘Nduja and cherry tomatoes with fresh burrata is perfect as part of a decadent tapas spread for a larger crowd or the main event for a romantic dinner for two.

Note: Sometimes, I find it difficult to acquire fresh Burrata cheese in my local store, in this case, I use mozzarella di bufala as an alternative which works as a OK replacement. However, do keep in mind that the creaminess that the Burrata provides really is unparalleled.

‘Nduja and cherry tomatoes bake with burrata cheese

Ingredients

  • 12 – 15 cherry tomatoes cut in half
  • 50 gr 'Nduja
  • 3 tbs fresh Pesto See link for homemade pesto above
  • 125 gr burrata cheese
  • aged balsamic vinegar for serving optional

Instructions

  1. Pre-heat the oven to 180°C.

  2. In a medium oven-safe baking dish place the cherry tomatoes facing down on the baking dish.

  3. Place small coins sized dollops of the 'Nduja salami along with the cherry tomatoes, making sure they are spread out evenly.

  4. Bake for 15-20 min or until the fat of the 'Nduja salami has started to blend with the tomato juices.

  5. Take out the baking dish and place on a heat safe surface.

  6. Add the pesto evenly on top of the 'Nduja and tomato bake and place the Burrata in the middle.

  7. Allow the dish to cool down for a couple of minutes.

  8. Alternative: if you are using mozzarella bake for 5 more minutes after placing the mozzarella in the middle.

  9. Finally drizzle the balsamic vinegar on top of all the ingredients and serve along with sourdough bread.
