Chicken Pesto Salad

This chicken pesto salad is one of my favourite weekday meals. It is so satisfying! You’ve got the richness of the homemade pesto, super filling and healthy, filled with vegetables and some extra goodies, simply  a full meal in a bowl. However the biggest selling point is that it is super easy to make and ready in under 30 min. It also allows for you to experiment and add or drop ingredients per your liking. I am a huge fan of the sweet and salty flavour combination which is why I usually have some type of fruit in all my salad, typically mango or apples, but dates or strawberries will also do the trick taking the salads to the next level.

Ingredients

  • 2 chicken filets
  • 5 tbsp Pesto Sauce
  • 10 cherry tomatoes halved
  • 1 avocado diced
  • 1 pack assorted salad leaves
  • 1/2 pack feta cheese diced
  • 1 medium mango diced
  • 1 cucumber diced
  • Olive oil
  • Croutons
  • Bacon crumbled
  • Salt
  • Pepper

Instructions

  1. In a hot pan add some oil, season the chicken with salt and pepper and cook until done. About 7 mins on each side.

  2. Set it side to rest while you prepare the rest of the ingredients.
  3. Meanwhile cook the bacon until crispy. Once done set it aside to rest on a kitchen towel to remove all excess fat
  4. In a large bowl add the rinsed salad leaves, and the rest of the ingredients.
  5. Shred the chicken and mix it with 3 table spoons of pesto sauce.
  6. Add the pesto chicken to the salad and 1-2 extra spoons of pesto to the salad and mix throughly. Add some salt and pepper to taste and serve with garlic bread.
