After living in several countries, I have become a patchwork of traditions and customs from all over, specially so in my cooking. I love making Spanish tapas, bolinhos de bacalhou or having Norwegian taco Fridays.
In the Norwegian version of tacos you would add a myriad of condiments and ingredients, but after having tacos every other Friday, it still became a bit uninspiring. Definitely not the feeling you want when eating a delicious taco. So I decided to spice and freshen things up with different salsas. This mango salsa has been consistently improving every taco Friday and now I even make it as a side for other dishes and even topping for hotdogs (the Colombian version of course).
Feel free to add or drop ingredients per your liking, you can always have another go at it if one ingredient doesn’t really work for you.
- 1 ripe Mango (the Pakistani variety is the most flavourful), diced
- 10 cherry Tomatoes, diced
- 1 medium shallot onion or small red onion, finely diced
- 1 small garlic, finely diced
- 1/3 yellow pepper, finely diced
- 1/3 orange pepper, finely diced
- 1 red hili pepper, minced (optional)
- 1 lime, juiced
- Large handful of cilantro (coriander), chopped
- Fresh ground black pepper
- 1. Mix all ingredients in a bowl except for coriander in a bowl add the about half the lemon juice and sprinkle some sugar. Stir well and make sure that the sugar is evenly blended.
- 2. Let the salsa sit for about 10 minutes, add cilantro and season with salt and pepper to taste.
- 3. If needed add more lime juice so that the flavours combine well together. This depends on the sweetness of the mango and other ingredients.
- Play around with colours, I like keeping it in the yellow tones with a bit of green but you can replace or add green and red peppers, jalapeños or even replace the mango for fresh pineapple.
- ou can also add chili powder if you wish to make the salsa more spicy. Just listen to your taste buds, they are the ones that pass the last judgement!
