Perfect little fluffy pieces of heaven that hide all kinds of delicious veggies. These zucchini/courgette or squash fritter are my absolute #1 go-to side when my very opinionated 1 year old decides to go on a no-veggies strike. They are super easy to pick up and chew, perfect for BLW babies, with the added bonus of little to no crumbs or mess.
I’ve been making these yummy pancakes or fritters for my kiddo since she was 8 months. After I realized how impossible it was to get veggies into my otherwise very eager eater baby girl, these pancakes became our best friends.
I use zucchini/courgette as the main veggie and add other vegetables such as cooked onions and garlic, shredded carrots, mashed broccoli and cauliflower, shredded sweet potato, or even leftover grilled sweet corn. Really, go crazy and experiment! The worst-case scenario is you have extra yummy pancakes for yourself!

Savory Zucchini Pancakes
Ingredients
- 1 zucchini or courgette finely shredded
- 1 small carrot finely shredded
- 1 egg
- 2 tbsp flour of your choice I prefer rye flour
- 1 tsp baking powder
- ½ tsp onion powder
- ½ tsp garlic powder
- Butter or olive oil for cooking the pancakes
Instructions

Mix all the ingredients in a bowl, preferably one that has a lid and can be easily stored in the fridge

Once all ingredients are mixed thoroughly, heat a frying pan and add some butter or olive oil.

Place about 1 – 1½ tbsp of the mixture and spread evenly it in a somewhat pancake looking shape and make sure to smooth the edges to avoid burning them. Cook at medium heat for about 5-7 mins or until they are golden and you are able to flip them.
