Salmon burritos with Mango salsa

This salmon burritos are everything you want in a burrito, tasty, juicy, tangy and fresh. I felt that we had gotten into a Salmon rut, it seemed like we had gone through all of our salmon recipes and I was a bit tired of the same old, same old. So, I decided to go for some salmon tacos and boy, was that a good decision because they were just delicious!

For the fish
  1. 4 skinless, boneless salmon fillets
  2. 1 tbs paprika
  3. 1 tbs cumin
  4. 1/2 tsp black pepper
  5. 1 tsp salt
  6. oil, for cooking
For the mango salsa
  1. 1 cup ripe mango, finely diced
  2. 1 shallot, finely diced
  3. 5 cherry tomatoes (or 1 big tomato), finely diced
  4. Red chili pepper, finely diced (to taste)
  5. 1/2 lime, juice
  6. 1 handful coriander
For guacamole
  1. 2 ripe avocados, diced
  2. 1/2 cup natural yogurt
  3. 1 garlic clove, crushed
  4. salt
  5. pepper
To serve
Instructions
  1. 1. Mix all the ingredients for the Mango Salsa, and season to taste. Allow the salsa to rest for about 10m.
  2. 2. Mix all the ingredients for the Guacamoles salsa, season to taste. Allow the salsa to rest for about 10 mins.
  3. 3. Mix the spices for the salmon and rub them on to the salmon until it has been completely coated.
  4. 4. Cook the salmon on a hot pan with neutral oil for 7-10 min on each side, or until it's cooked through.
  5. 5. Break the salmon into chunks and serve in a bowl.
  6. 6. Heat up the flour tortillas and serve.
Notes
  1. Building the burritos at the table is a fun activity for whole family. Just make sure the heat from the red chili pepper is adequate for everyone at the table.
