

I am totally hooked on this banana bread sheet cake. Yeah, it’s more cake that it is bread. But boy is it delicious and and quite nutritious, comparatively speaking π
This super fluffy and moist banana bread is so quick and easy to whip up, it literally takes me as long as it takes the oven to warm up to whisk everything together and put the tray in the oven. Perfect to eat warm as midday snack or as a light dessert after brunch, whip it up and this banana bread will be ready to eat after you are done with your brunch!
The riper the banana the tastier this becomes and you can then easily reduce the sugar to your liking.

Banana bread sheet cake
Ingredients
- 2 ripe bananas mashed
- 2 eggs
- 1/3 cup neutral vegetable oil sunflower
- 1/2 tsp almond extract
- 1 tsp vanilla extract
- 1 cup wheat flour or 1 1/2 flour if not using almond flour
- 1/2 cup almond flour optional
- 1/3 cup castor sugar
- 1 tsp baking soda
- 1/4 tsp salt
- Chocolate chips optional
Instructions

Preheat the over to 180β

In a large bowl mash the bananas

Add the eggs, oil, almond and vanilla extract and whisk throughly.

Add the wheat flour, almond flour, sugar, basking soda and salt and whisk lightly until you have an even batter.

Line a 20 X 30cm oven safe baking tray with parchment paper and spread the batter in the tray.

If using chocolate chip you can top the batter with a handful of chocolate chips.

Bake for 20 minutes or until cooked through and golden.
