Peanut butter and chocolate Oatmeal cookies

Ingredients

  • 1 cup quick oats Optional: Gluten-free oat
  • 3/4 cup chunky peanut butter
  • 3/4 cup brown sugar
  • 1/4 cup neutral vegetable oil,
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 180C

  2. Whisk together the eggs, sugar, peanut butter, and oil until you get a smooth even consistency.

  3. Pour in all dry ingredients except for the chocolate chips and mix until you reach a dough consistency

  4. Fold in the chocolate chips

  5. Allow the dough to rest in the fridge for at least 20 minutes. 

  6. Remove dough from the fridge and line a large baking sheet with parchment paper.

  7. Using a small spoon, scoop out the dough about into round form and place it in the baking tray approximately 2-3 cm apart. You’ll get about 15 -20 smaller cookies

  8. Bake for 8-10 minutes. Sprinkle the cookies with sea salt and let cool for at least 10-15 minutes.
